Good Food Month | Once Upon a Toum in Mexico

Bar Saracen will be throwing a fiesta of Middle Eastern appearance to celebrate the Mexican wave of Lebanese immigration that took place in the 1960s. During this time in Mexico, Lebanese immigrants opened their own restaurants and began to combine the food of their heritage with local cuisine.

One of the most exciting dishes created by the merging of the two cultures was ‘tacos árabes’, where lamb shawarma was served in a pita style bread called ‘pan arabé’. This later evolved to ‘tacos al pastor’ where pork is marinated with pineapple, chillies and spices then slowly cooked, thinly sliced and served in tortillas.

A chicken version of al pastor was brought back to Lebanon the early 2000s called ‘Shawarma Mexici’ and uses toum (Lebanese garlic sauce).

Chef Tom Sarafian will cook a three-course menu exploring these Lebanese and Mexican flavours.
